TOMATO BASIL CHICKEN & QUINOA SKILLET

I requested and you responded – QUINOA!  Quinoa is sooo smooth to work with, is flexible and is a terrific high protein grain.  I wanted to make a recipe with it that became a one pot marvel, and you realize i like myself a few tomato basil goodness!  I haven’t shared a quinoa recipe on right here for the reason that 2016 so I figured it become approximately time proper? funny tale about this dish, I concept it’d be fun to try to deliver a few to Ruth.

TOMATO BASIL CHICKEN & QUINOA SKILLET

INGREDIENTS:

  • 3 tablespoons avocado oil
  • 2 chicken breasts
  • 1 yellow onion, chopped
  • 4 cups of water
  • 2 cup of quinoa
  • 2 cups cherry tomatoes, chopped
  • 1 cup basil leaves, chopped
  • 1 teaspoon minced garlic
  • Salt and pepper

INSTRUCTIONS:

  1. vicinity a big saute pan (with better aspects) over medium high warmth and add oil once heated.
  2. Slice bird breasts in half of lengthwise so you create 4 thin chook breasts.
  3. Sprinkle bird breasts with a few salt and pepper.  upload hen to the pan and prepare dinner for four-5 mins in line with aspect (or till bird is cooked all through).
  4. Then to that pan upload chopped onion and prepare dinner for two minutes.
  5. upload water and produce it to a boil, then add in quinoa, cherry tomatoes, basil, garlic and a pinch of salt.
